Sure the 5D is a great camera, but in this case the lens is really responsible for the sharpness. The 70-200mm f/4L is amongst the sharpest Canon lenses and I will never give that one away ...
The only advantage of the f/2.8 is the one stop. Image quality is even considered to be a little below the f/4. So it might be an option if you're a sport photographer. For me as a nature photographer it is just too heavy and not worth the money.
